I’m having a lot of fun turning regular pumpkin things into Mickey pumpkins since we’re in love with Disney around here.

Mini desserts are so much fun to make and snack on at parties and at home! Of course, regular pies are beautiful but there is something about mini desserts like these Mini Caramel Pumpkin Pies that I just love.

I’m also loving this caramel pie filling that these Mini Caramel Pumpkin Pies have! The caramel filling with the mini pie crusts and the green candy stems make these little pies just adorable and perfect for Halloween and any other Fall event!

These Mini Caramel Pumpkin Pies have orange sprinkles on the pie dough but you could also make homemade pie dough and dye it orange. Or you paint the pie dough with orange food coloring before baking! That might work pretty nice too!

Buffalo flavored snacks and appetizers are so good.  I think that buffalo goes great with chicken and with meatballs, plus buffalo dip is always a winner!

Your family and friends are going to love this Sweet Potato Jack O’ Lantern!

Mashed sweet potatoes with a little bit of butter and brown sugar, this simple dish gets a spooky makeover with the addition of some sweet candied pecans and toasted marshmallows. It would make the perfect addition to a Halloween-themed potluck or buffet. Or even just a fun meal at home!

Holiday food is so much fun! I love to try and get creative with my food whenever a holiday rolls around.

Red Velvet in February, lots of festive sweets like my favorite gluten free eggnog sugar cookies, gingerbread men, and peppermint in December. And of course there is Thanksgiving in November, lots of seasonal flavors and a few fun turkeys.

And then there is Halloween. Halloween could be easily overlooked as just a candyholiday. Lots of candy and of course #PumpkinEverything.

But Halloween has so much more potential! Just get creative and make some creepy ghouly food. Or something cute and fun like this Sweet Potato Jack O’ Lantern.

I love telling stories about my childhood! Every other post I write I say “I made this with my mom when I was a little girl,” or “this reminds me of one of my childhood favorites.” It might make you think that my mom was just this amazing, creative, baking and cooking whiz! Well, my mom is amazing and creative, but she would be the first to say that she isn’t a cooking whiz. She really doesn’t like cooking at all.

Which is probably one of the reasons that I love it! As soon as it became apparent that I had a love for food and a knack for cooking she let me take over the kitchen. She really nurtured my love of cooking, and encouraged me along the way.

Anyways, this brings us to Halloween Potatoes.

We ate Halloween potatoes all the time when I was little (under age 5.) The Halloween potatoes of my childhood were nothing like this Sweet Potato Jack O’ Lantern, but they inspired it none the less. My parents would often make mashed potatoes using half sweet potatoes and half plain ol’ russet potatoes. They would get me to eat them by calling them “Halloween Potatoes.” So of course they were my favorite!

You really can get kids to eat almost anything if you give it a fun name. Or make it look like a Jack O’ Lantern.

Halloween is almost here!!! It’ll be here in less than 3 weeks! Are you ready? I kind of am. Not really, but getting there! Halloween is pretty much one of my favorite holidays.

Does help that that favorite color is Orange and what’s Halloween without Orange?!? haha BigBear says that I love it so much because it’s the one day out of the year that I can take my true form (a witch) and no one notice… LOL oh Big Bear…. be glad I love you so much

I’ve got a Sweet…. I mean…. Spooky Halloween recipe for you!!

An awesome Halloween Box that showed up on my doorstep a few weeks ago, packed full of Halloween goodies from Kraft. I felt like a little kid on Christmas morning! I pulled everything out and just fell in love with the Pumpkin Marshmallows and the Jello Jiggler mold!

After a little brainstorming, I decided to use them to make these Spooky Marshmallow Filled Chocolates!

I love all of the shapes that are in the Jello Jiggler mold! Bat, Cats, Ghost, Pumpkins and Witches! These are so easy to make and rather impressive if I do say so myself.

I’m thinking about making some more and boxing them up as Halloween treats for some lucky family members haha

It’s almost here y’all! It’s almost time for us to go to Mickey’s Not so Scary Halloween party! I’ve been wanting to go to Disney World for Halloween forever but I just never took the time to plan out a trip around October, well until this year that is!

Thomas and I finally set down during the summer and decided that we were indeed going to drive down to Florida this year for Vacation! Going to Disney in October? You KNOW we were going to make sure that we planned it so that we could attend one of the parties! I’ve never been to Disney World for Halloween and I’m so super excited!  I’m almost done with my costume too! Ursula is on her way to Disney World soon! haha

So I thought that since we’re all about Halloween and Disney World right now that this would be a great time to give you some Mickey Pumpkin Marshmallow Cereal Treats! Well you know….not GIVE you Mickey Pumpkin Marshmallow Cereal Treats but show you how to make them!

So what you’re going to need to do first is get your hands on a Mickey Mouse Cookie Cutter.  I got mine at Disney World like 10 years ago haha but you can find them on Amazon and I think Wilton makes one too.  If you don’t have a Mickey Mouse cookie cutter you can always cut them out by hand but that seems like a pain.

So once you get your marshmallow treats made and cut out, you’re just going to want to melt some orange candy melts and spread them over the top of the treat.

Let that harden and dry. Once the orange is hard, melt some black candy melts. Let them cool for just a few seconds and then pour the black candy melts into a piping bag.

Snip the end and then pipe a face onto your mickey pumpkin marshmallow treats.

Oh my gosh, isn’t that the cutest Mickey Pumpkin Marshmallow Cereal Treat ever! Well, at least it’s the cutest that I’ve ever made haha.

Ps. I CAN NOT WAIT to see all of the Halloween treats at Disney World this year! Have you ever been for Halloween? Anything we shouldn’t miss?

Mickey Pumpkin Marshmallow Cereal Treats

Mickey Pumpkin Marshmallow Cereal Treats

Yield: 9 Large Treats

Prep Time: 10 minutes

Cook Time: 10 minutes

Chill Time: 30 minutes

Total Time: 50 minutes

Sweet Chocolate covered Mickey Mouse rice krispie treats! Have fun the kids, making your very own Disney treats in your kitchen.

Ingredients

• 6 tablespoons butter
• 20 ounces marshmallows
• 12 cups rice krispie cereal
• 12 ounces Orange Melted Chocolate/Candy Coating Wafers
• 12 ounces Black Melted Chocolate/Candy Coating Wafers

Instructions

Melt the butter in a large pot and add the marshmallows. Stir until they are all melted!

Add rice krispie cereal a little bit at a time and stir to combine.

Spray a large flat surface with butter spray. *I lay out a few sheets of foil and spray it*

Pour marshmallow treats onto flat surface and shape into a large rectangle, about 1 inch thick.

Let rice krispie treats sit for about 30 minutes.

Use a Mickey Mouse cookie butter to cut Mickey heads from marshmallow treat rectangle. You should be able to get 9 large Mickey Heads.

Melt orange chocolate according the package directions.

Use a spoon to scoop out a bit of orange chocolate for each of the mouse heads. Use the back of the spoon to spread the orange chocolate.

Let orange chocolate dry and harden for about 10 minutes.

Melt the black chocolate, let cool for just a few seconds so it doesn\'t burn your hands, then spoon it into a piping bag.

Use the black chocolate to draw a pumpkin jack-o-lantern face.

Let treats sit for about 20 minutes undisturbed or until the chocolate had hardened
